Mac ‘n (4)cheese
So your cheese imagination is your only limit here! My cheese combinations change every time I make this dish, but here is the one I used for the meal in the photos!Ingredients:2 tbs butter2 tbs flour1/2 cup milk1 C grated cheddar1/2 C grated parmesan1/4 C cream cheese1/4 C asiagosalt & ground pepperDirections:Melt the butter in a medium saucepan, over low heat. Add the flour & cook, stirring continuously, until the mixture is smooth and starts to bubble -  about 30-40 seconds.Stir in the milk gradually, and cook until the mixture thickens and comes to a boil. Remove from heat.Now add the 4 cheeses, and place on low heat. Cook, while stirring, for a few minutes until the cheese melts. Add salt & pepper to taste.Pour over the cooked & drained macaroni and stir around, until the pasta is evenly coated.If you wish, you can top with all kinds of things at this point: jalapenos, green onions, oregano, etc! Go wild :D
We like serving it up in individual french onion soup bowls! Then you can add some extra cheese, grate a bit of crusty bread on top, and pop into the oven for a few minutes to get a bit of a crispy crust going!
