Key Lime Pie - the quick & easy version (really!)
Ingredients
4 egg yolks, beaten
2 (14oz each) cans of sweetened condensed milk
3/4 cup key lime juice
1 (9 inch) prepared graham cracker crust
Directions
Preheat oven to 375F
Combine egg yolks, sweetened condensed milk and lime juice. Mix well. Pour into unbaked graham cracker shell
Bake in the preheated oven for 20-25 minutes. Let cool and top with whipped topping. Garnish with lime slices.
You can vary the tartness by playing with the amount of lime juice. For a calorie reduced version, try using low fat sweetened condensed milk instead.
For best results, I like to make it ahead of time, and have it cool in the refrigerator overnight. I also prefer freshly squeezed key limes, but that’s just me :p
